Apple-Flax Pudding Recipe

It was a Sunday afternoon, I was longing for something dessert-like, something  kind of healthy and something easy to make with the ingredients that I had on hand. I looked around the kitchen, my gaze landed on the basket of apples that our backyard apple tree had so kindly provided, and our Golden Valley Flax.  With those two ingredients in mind, I delved into my supply of cookbooks.  After a quick search, I decided to make Apple Pudding…however I tweaked the recipe just a little, to create Apple-Flax Pudding because I wanted to take advantage of the health benefits of flaxseed by incorporating our North Dakota flaxseed.

  • 6 apples peeled and sliced. (I used 10 smaller apples from our apple tree)
  • 1 cup sugar (you may substitute ¾ cup honey for the sugar)
  • 2 Tablespoons flour
  • 2 tablespoons ground Golden Valley Flax
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 ½ teaspoons baking powder

Slice apples into baking dish.  Mix other ingredients well and pour over apples.  Bake at 350 degrees, for 30 minutes or until brown.
