Icelandic Apple-Flax Pie

Adapted from a recipe from the Hall’s Heritage Cookbook originally submitted by Montelle Bolstad.

I sat down one cold, snowy, North Dakota Saturday to search for a recipe that I could make without going to the grocery store.  Icelandic Apple Pie caught my attention!  This past fall, we had a bumper crop of apples, and my freezer was full of apples that we had peeled and sliced.  Icelandic Apple Pie looked like something that would be easy to make and tasty to eat!  Of course, I altered it a little, to add some Omega 3 goodness, in the form of Golden Valley Flax!  Judging by the empty pie plates, it was a hit in the Hylden home.

Ingredients

  • 2 cups diced apples
  • ¼ cup ground Golden Valley Flax
  • 1 ½ cup white sugar
  • 2 eggs
  • ½ cup chopped nuts
  • ¾  cup flour
  • 1 tbsp. vanilla
  • 2 tsp. baking powder
  • ½ tsp. cinnamon
  • ½ tsp. salt
  • 2 tbsp. whole Golden Valley Flax
  • ½ tsp. nutmeg
  • Whipped cream, vanilla yogurt, or ice cream.

Directions

Mix the first 7 ingredients thoroughly.  Add eggs, vanilla, apples, nuts and whole flax.  Grease two 8” pie pans.  Pour half of mixture in each pan.  Bake at 350 degrees for 35-45 minutes.  Pie makes its own crust.  Top with whipped cream, yogurt or ice cream.
